Synthetic vs. Bacterial Fermentation
Acetic acid can be produced synthetically or via bacterial fermentation. Most of the acetic acid generated worldwide is synthetic for industrial applications, and only a small amount – around 10% – is obtained through bacterial fermentation to produce vinegar (food laws state that this product must be of biological origin).
From the synthetic acetic acid, about three quarters are made by a carbonylation reaction, involving methanol and carbon monoxide:
CH3OH CO → CH3COOH
Before this method was developed, acetic acid was synthesised via oxidation of acetaldehyde. Under certain circumstances, this method is still used but usually is less competitive than the more modern version. Acetaldehyde is oxidised in the presence of various metal ions, such as cobalt or manganese, according to the following reaction:
2C4H10 5O2 → 4CH3COOH 2H20
The reaction occurs at high temperature and pressure, typically 150 °C (302 F) and 55 atm. By-products include butanone, formic acid and propionic acid, which are commercially valuable and used in secondary reactions.
A recent method, developed in 1997, involves the direct oxidation of ethylene to acetic acid. The method occurs in the presence of a palladium metal catalyst and tungstosilic acid. It is believed to be as competitive as the methanol carbonylation for small-scale production.
